Kenny Roger's corn muffin

1/2 Cup butter
2/3 cup sugar
1/2 cup milk
1/4 cup Honey
2 Eggs
1 tsp salt
1 1/2 cups all purpose flour
3/4 cup cornmeal
1/2 tsp baking powder
3/4 cup frozen sweet corn

Preheat oven to 400 F.
Mix butter, sugar, honey, eggs and salt into a large bowl.
Add flour, cornmeal and baking powder. Mix thoroughly.
Add milk while mixing
Add corn to mixture
Fill muffin pan 2/3 full with mixture
Bake for 20 - 25 minutes or until muffins are light brown.



for muffins, do not mix thoroughly. the mix should be lumpy. wet into dry ingredients and 3-4 quick sitr should do. not all the flour need to be incorporated. hope it make sense to you.







  • 8 tbsp mentega, dicairkan
  • 4 cawan tepung
  • 2 cawan gula
  • 2 cawan susu segar
  • 4 tbsp baking powder
  • 1 tsp garam
  • 2 biji telur
  • 1 tbsp esen vanilla

Cara-cara

  1. 1.Gaulkan kesemua bahan hingga sebati.
  2. 2.Isikan adunan tadi kedalam bekas muffin.
  3. 3.Bakar selama 20minit/180C.





Kenny Rogers Vanilla Muffins (The Clone)
Makes 12
125g butter
80g sugar
1 tsp vanilla essence
2 eggs
125g flour
2 tbsp milk
50g buttercream
1. Cream the butter and sugar till white as the night
2. Add in the eggs one by one and beat it like you mean it
3. Sift the flour and fold it in slowly (quite using the beater)
4. Add in the milk
5. Add in the buttercream
You want to aim for a buttery texture that’s not too soft. I’ll have to give it another go to confirm that this is indeed the saviour our wallets have been waiting for.
I want to try out the clone recipe on Top Secret Recipes though, it’s for Corn Muffins and I have no idea what the spoon that is!
